2025 'Eternal Rhythm' Nebbiolo
Praeter’s first Nebbiolo release from the Talc Hill Vineyard. The site is situated between 450-480m ASL, on a steep north-north west facing slope. Shallow brown loam over chalky limestone and quartz. The site features 7 different clones of Nebbiolo, some of which don’t have wide dissemination around Australia. An important historical planting for the country.
Grapes were 100% destemmed and transferred via gravity to an open fermenter where they underwent spontaneous alcoholic fermentation. Only pump overs were used during the course of maceration, and the grapes stayed on skins for 24 days before being pressed and racked to seasoned, large-format oak for malolactic fermentation. The wine stayed on fine lees for 11 months before being racked and bottled without fining or filtration.
